
If like me you find Christmas cake just a bit too rich, then this light fruit cake is perfect. Soaking the fruit overnight takes time but well worth it. Next time I’m going to experiment with Chai tea, to add some extra spice!
Ingredients:
225g / 8oz Self Raising Flour 300ml / 0.5 pint cold Earl Grey Tea
125g / 4oz Caster Sugar 375g Sultanas or mixed Fruit 1 Egg (beaten)
Good pinch Pumpkin Spice or Mixed Spice
Method:
- Place fruit and tea in bowl and leave to soak overnight.
- Add sugar, egg, flour and spice and mix well.
- Transfer to a greased tin.
- Bake in a pre-heated oven 170°C/325°F for one hour.
- Leave cool (slightly)… Slice and add butter. Yum yum
